The Wine Advocate:

The sparkling brut 2017 Esparter was produced with Macabeo grapes exclusively, cropped from a 2.1-hectare organic, dry-farmed vineyard planted in 1968 close to the sea that gives it humidity and freshness. It fermented with native yeasts in 3,000-liter oak foudre and stainless steel vats where the wine was kept for eight months and then refermented in bottle with concentrated must. It matured in bottle with the lees for no less than 60 months. It has a bright golden color and an expressive and nuanced nose with plenty of smoky, toasty and yeasty notes from the extended contact with the lees and a core of waxy apples. The palate is velvety, textured by the abundant small bubbles, with a spicy and yeasty finish with some balsamic notes of Mediterranean herbs. 13,099 bottles produced. - Luis Gutérrez.
